Perfect morning and night bread to eat with your coffee of the day!
Ingredients:
Bread:
1 3/4 cup of flour
1 1/2 cup of sugar
1 teaspoon of vanilla
1/4 cup + 1 tablespoon of evaporated milk
1/2 cup of oil
2 eggs beaten
1 teaspoon of baking soda
2 over-ripe bananas mashed (if they are SUPER ripe, 3 is fine too)
Pecans (as many as youd like :) )
Glaze:
3/4 cup of brown sugar
1/2 a tablespoon of butter
1/4 cup of water
Pecans (as many as you'd like!)
Steps:
Bread:
Beat eggs with the vanilla, baking soda, milk, and oil.
Gradually add the sugar, and beat until smooth.
Add the flour and beat to a light mix.
Add bananas and beat till completely mixed.
Butter your loaf tin and sprinkle with flour.
Add your batter into the pan.
Bake at 325 degrees F for 60 - 80 minutes.
Glaze:
In a sauce pan, add the brown sugar, butter, and water
Constantly stir over medium heat
Once it starts to boil/bubble, remove from the heat
Add the pecans and mix them in
Pour over your cooled bread
I like to leave my banana bread over night to cool the glaze, and then its ready to be devoured the next day :)
