Coffee Cake with Pecan, Brown Sugar, & Cinnamon Filling

Craving the Starbucks coffee cake? Well make it at home now. :)

Ingredients:
Cake:
1 Cup of butter, room temperature (important to be room temp)
3 Cups of sugar
6 eggs, room temperature
1/4 teaspoon salt
1/4 teaspoon soda
3 cups flour
1 cup sour cream
1 teaspoon vanilla
Filling:
2 cups of chopped pecans
8 tablespoons of dark brown sugar
4 teaspoons of cinnamon
Steps:
Cake:
Preheat the oven to 300 degrees F.
Mix together salt, soda, and flour together
Sift dry ingredients 3 times and leave to the side
In a separate bowl, cream the butter and sugar by using an electric whisker
Add eggs one at a time, beating well after each
Add the sour cream and flour mixture -- Alternating and ending with flour mixture (flour, sour cream, flour, sour cream, flour)
Add vanilla
Grease tube pan or bundt pan
Mix all ingredients for fillings in a medium sized bowl, and sprinkle a small amount on the bottom of the pan
Add 1/2 of batter on top
Sprinkle more topping
Then add the remaining batter and sprinkle the rest of the topping
Bake for 1.5 hours. Do NOT open the oven for the first hour.
*Side note, if you like your cakes sweeter, go ahead and add about 1/2 more sugar in the beginning.*
This cake will last you about a week long outside. I personally enjoy the cake after it has been warmed up, but tastes good at room temperature too :) Enjoy with a cup of coffee!
